Back to School Cupcake Recipe (Lego Cupcakes)

Back to School Cupcake Sparkle Recipe Fun

 

With the kids finally back to school you hopefully may have a little more time on your hands or if your likes us at Cupcake Sparkle, then your days are even busier than before. There’s now the school runs, homework and packing your little ones a packed lunch they will enjoy.  

 

We all know it’s a nightmare to try and think of new imaginative tasty home baked treats to fill those lunchboxes and with every child there need a balance between healthy and fun. So, this months cupcake recipe will give you all your need to create that perfect decorated cupcake to win over even the fussiest kid.

 

All kids (and grownups) love Lego, its fun, bright, creative and easy to make and so is this cupcake recipe below which includes all of the favourites you can find within our fabulous range of stocked 200 cupcake accessories. 

 

 

 

‘Sparkle’ Lego Cupcakes (some images above for ideas and designs.)

 

Makes 12 cupcakes or 6 Muffins

 

You will need:

Equipment:

RED CUPCAKE BAKING CASES

YELLOW CUPCAKE BAKING CASES

SPRING GREEN CUPCAKE BAKING CASES

SUGARTINT DROPLET COLOURING Scarlet

SUGARTINT DROPLET COLOURING Blue

SUGARTINT DROPLET COLOURING  Green

SUGARTINT DROPLET COLOURING  Black

Fork

Large bowl

Electric mixer or hand whisk

Teaspoon

Wire rack for cooling

Cupcake or muffin tin

Scales

3 TIER CARD CUPCAKE STAND - WHITE  (Optional)

 

 

 

Ingredients:

2 Free Range Eggs

100g (4oz) Soffend Butter

100g (4oz) Grandulated Sugar or Caster Sugar

100g (4oz) Self Raising Flour

1 Teaspoon Baking Powder

Few drops of a good quality vanilla essence

 

For the Iced topping:

100g  (4oz) White Fondant icing

Various Sugartint Colouring (see equipment)

 

Preheat the oven to 190oC / 375 oF  / gas mark 5

 

1.    Put the paper cases into a cupcake or muffin tin.

2.    Put the butter, sugar and vanilla essence into a mixing bowl. Use a wooden spoon and mix them together until the mixture is fluffy and creamy.

3.    Beat in the eggs, one at a time, adding a tablespoon of flour with each one (this will stop the mixture curdling)

4.    Sift the rest of the flour and baking powder into the bowl. Use a table spoon to mix the ingredients gently, as if you were drawing a figure of eight. This will make sure your mixture stays nice and fluffy. Or you can you fold in the flour and use an electric mixer to mix well.

5.    Use a tablespoon to transfer equal amounts of mixture to the paper cases. Bake the cupcakes for approximately 20 mins (muffins may take 20-25 mins) or until they are well risen and if touched the cake will spring back.

6.    Leeve them to cool on a wire rack.

7.    You can now make the topping

 

Topping:

8.    Divide the fondant icing sugar into 4 equal quantities

9.    Add a few drops of the first colour into one of the icing sugar bowls. Blend well together to create a coloured paste. Keep blending so the colour is even.

10.For the other 3 colours, do the same as above so you are left with 4 separate colours.

11.When mixed roll out on some icing sugar flat.

12.Start cutting out your patterns, remember you can create whatever you like Lego wise, but keep it simple to start with. (check out picture one as these are simple designs and easy to recreate)

13.Even get your children to help as its fun when you get going.

14.Eat immediately or fill the lunchboxes and don’t forget to try one yourself.
